Vegan Chocolate Chip Cookies

My friends Jon and Kolene over at VeganGR are always making vegan chocolate chip cookies and slipping them into non-vegan events with great results. By great, I mean no one can detect the damn difference between the vegan chocolate chip cookies and “normal” chocolate chip cookies.

I’m not wild about any butter/margarine substitute, so I took a crack at an Earth Balance free recipe posted on the Post Punk Kitchen instead. I was not disappointed. The texture was a little crazy, but not in a bad way. The tops of these guys were like crackly almost, flaky certainly, but honestly, a great way to satisfy your sweet tooth in a cruelty free way.

A little bonus: in using canola or veg oil, you don’t have to fight that battle of getting the butter/margarine “room temperature” which ultimately ends up in me making margarine soup in the microwave because I don’t have the patience to zap it slowly and/or I didn’t plan to make cookies at 9am that morning and now it’s officially an emergency at 10pm to get a cookie crammed into my pie hole before I hit the hay. Don’t pretend you have not experienced this same emergency before. It’s a real problem.

Makes two dozen two inch cookies or about 16 three inch cookies

  • 1/2 brown sugar
  • 1/4 white sugar
  • 2/3 cup canola oil (it’s a lot, I know…but no other oil is used)
  • 1/4 cup unsweetened almond milk (or your favorite non-dairy milk)
  • 1 tablespoon tapioca flour (I used Arrowroot and still had sound results)
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cups chocolate chips (vegan)

Preheat oven to 350 F. Lightly grease two large light metal baking sheets.

Mix together sugars, oil, milk and tapioca flour in a mixing bowl. Use a strong fork and mix really well, for about 2 minutes, until it resembles smooth caramel. There is a chemical reaction when sugar and oil collide, so it’s important that you don’t get lazy about that step. Mix in the vanilla.

Add 1 cup of the flour, the baking soda and salt. Mix until well incorporated. Mix in the rest of the flour. Fold in the chocolate chips. The dough will be a little stuff so use your hands to really work them in.

PPK directions: For 3 inch cookies, roll the dough into about ping pong ball size balls. Flatten them out in your hands to about 2 1/2 inches. They will spread just a bit. Place on a baking sheet and bake for about 8 minutes – no more than 9 – until they are just a little browned around the edges. I usually get 16 out of these so I do two rounds of eight cookies. Let cool on the baking sheet for about 5 minutes then transfer to a cooling rack.

For 2 dozen two inch cookies roll dough into walnut sized balls and flatten to about 1 1/2 inches and bake for only six minutes.

I found however, it took a little longer to produce a cookie that was cooked through. Check on them every minute or so to insure you don’t burn ’em until they are to your liking.

A Tale of Two Lentil Taco Recipes

It was the best of times, it was the worst of times, it was the age of wisdom, it was the age of foolishness, it was the epoch of belief, it was the epoch of incredulity, it was the season of Light, it was the season of Darkness, it was the spring of hope, it was the winter of despair, we had everything before us, we had nothing before us, we were all going direct to Heaven, we were all going direct the other way – in short, the period was so far like the present period, that some of its noisiest authorities insisted on its being received, for good or for evil, in the superlative degree of comparison only (A Tale of Two Cities-Dickens-opening paragraph).

If I haven’t lost ya yet, now you have some trivia knowledge and two taco recipes coming right up!  See this is why we are friends!  Speaking of friends that tolerate me, my friend Angela asked me about these lentil tacos I keep talking about.  I went to direct her to my blog and realized, crap, I have never shared them on my blog.  Here you go Angela!  I have no pictures for you, but the recipe needs to get out into the universe.  We all know that pink slime, er beef is bad; love on a lentil instead.

Recipe One:  Lentil Tacos

Adapted from Isa Chandra.

2 teaspoons olive oil (you can do this oil free if you add a smidge of water to the onion when it starts getting sticky from sauteing it)

  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 2 1/2 cups cooked lentils (from about 1 cup dried)
  • 3 tablespoons tomato paste
  • 2 tablespoons hot sauce (preferably Cholula)

Spice mix:

  • 1/2 teaspoon dried oregano
  • 2 teaspoons ground ancho chile
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt

First combine all of the ingredients for the spice mix and set aside. Also, keep a cup of water within reach, you’ll need to add splashes as you cook.  You can totally put in taco sauce or salsa for the hot sauce and chili powder for the ancho pepper in the spice mix to make it less of a shock.

Preheat a large skillet over medium-high heat. Sautee the onion and garlic in the oil with a pinch of salt for about 3 minutes, until lightly browned. Add spices and toss them for 30 seconds or so to toast.

Lower heat to medium, add lentils, a few splashes of water, tomato paste and hot sauce; use a spatula to mash them a bit as they cook, until they hold together. If your spatula isn’t strong enough to accomplish this, just use a fork. Do this for about 5 minutes, adding splashes of water as necessary if it appears dry. Depending on the type of lentil you land, it will take more or less time to cook.  Taste for salt and seasoning; you may want to add more spices or hot sauce. And that’s it, time to serve!

Lentil Tacos Take Two

Adapted from the recipe above based on what I had in my kitchen

  • 1 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 teaspoon canola oil
  • 1 cup dried lentils, rinsed
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2-1/2 cups vegetable broth
  • 1 cup salsa
  • 12 taco shells
  • shredded lettuce, chopped fresh tomato, vegan cheese, avocado, limes

In a large nonstick skillet, saute the onion and garlic in oil until tender. Add the lentils, chili powder, cumin and oregano; cook and stir for 1 minute. Add broth; bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until the lentils are tender.

Uncover; cook for 6-8 minutes or until mixture is thickened. Mash lentils slightly. Stir in salsa.  Stuff in your shell of choice and serve with toppings as you have them available.

Red Thai Tofu with Sesame Rice Noodles

I love it when I can grab a bunch of stuff out of my fridge and create a great recipe.  Turns out Isa Chandra Moskowicz and I obviously share an icebox.  I got into Isa’s cookbooks only recently as I am not Vegan, only Vegan-ish.  I’m considered Lacto-Ovo Vegetarian, so it was just a bit ago that I discovered that her TV show Post Punk Kitchen is now available on Google Video.  As a side note, I’m happy to say that this Oprah mainstream stuff did not inspire me to go Veg or Vegan for that matter and I don’t rely on a personal chef to cook my meals for me.  Hell, if I have a personal chef, of course I’d be Vegan!!!!!  I’d also have a personal trainer, a car service, a magical camera to make me look skinny from all angles, the list goes on, and on.  However, I don’t live on Fantasy Island and I certainly do not have humpback whales to give each of you just for reading this blog, nor do I plan to build a school in Africa or buy a TV channel.  Sorry guys, I can see me slipping from your good graces one-by-one.  I want to be able to thank Oprah for the Vegan push, but I feel like she probably just bought the Teese Vegan Cheese Company (yeah, they are in Chicago) and wants to increase sales or something.  I know.  Glass half full as usual.

At any rate, back to Isa, goddess of Vegan cooking.  Here is what I most recently made as inspired by her highness:  Red Thai Tofu from her newest and greatest Appetite for Reduction.

Red Thai Tofu with Sesame Rice Noodles

I used Tamari in place of soy sauce in this recipe to make it Gluten Free

  • 1 block extra-firm tofu, pressed and cut into triangle pieces
  • 1 red bell pepper, seeded and sliced thinly
  • 1/2 C sliced shallots (which is a TON of those little buggers)
  • 6 cloves garlic, minced
  • 2 Tbs fresh ginger, minced
  • 1 1/2 Tbs Thai red curry paste
  • 1/2 C warm water
  • 2 Tbs Tamari (or soy sauce)
  • 1 Tbs light agave nectar (or maple syrup, or honey would be fine too)
  • 15 leaves fresh Thai basil
  • 1/4 C roasted salted cashews, chopped

Preheat a cast iron grill pan (or any heavy non-stick skillet) over medium heat.  Add the tofu and cook for about 10 minutes, careful not to burn, just brown both sides.  Take care while flipping the tofu in cast iron not to tear it, use a thin spatula, metal works better than plastic here.  About half way through, drizzle with 2 tsp of the tamari and turn to coat.

Remove tofu, set aside and saute’ the red pepper, shallots, garlic, and ginger in the oil that is left, careful not to burn the garlic.  Cook until translucent.  Meanwhile, in a small bowl, mix together the curry past, water, tamari, and agave.  Add tofu back to pan with the curry mix and cook for another 5 minutes or until the sauce is thick.  Add Thai basil, toss one last time and serve.

Okay, so when I was looking at this finished dish, it needed a bed of something.  Serve this on greens, or any grain you like, it goes well with everything.  I grabbed some leftover stick rice noodles, cooked them in hot water per the package instructions, then drained them and tossed with 2 tsp of roasted sesame oil-this made a delish bed for the tofu.

Lastly, there were two other things I was going to toss on top of this delicious mess, fresh bean sprouts and a bit of chopped red onion, but I of course forgot them as I was so excited to eat 🙂
